Italian - Mini Cannoli Recipe
After all this time I'm back here with a classic Italian pastry ... it's the first time I make them but they came very well and above all delicious ..
Ingredients for waffles:
200 gr flour 00
60g cold butter
25g caster sugar
1 pinch of salt
1 pinch of cinnamon
vanillin
1 egg
1 tablespoon unsweetened cocoa powder
50 grams of marsala
2 tablespoons of white vinegar
oil for frying
albumen q.b.
Ingredients for the filling:
500g ricotta
1 vial of orange flowers
100g chocolate chips
100g diced candied orange
vanillin
250g icing sugar
1 pinch of cinnamon
To make the waffles just mix all the ingredients together writings ... then add more flour until the mixture is well blended will be soft and supple! Wrap the dough in plastic wrap and let rest 1 hour in the fridge!
Meanwhile, prepare the filling by mixing all the ingredients together ...
When it passed an hour spread the mixture on a floured surface, coppare circles (I used the cup from breakfast) and wrap them in cilidri steel (typical cannoli!) And seal with a bit of egg white to make them stick well.
Fry them well and let them drain .. cool! With the pastry bag fill the cannoli and decorate as you like!
