Vegan Recipes: Pasta with vegetables - eggplant, peppers, zucchini, tomatoes.
INGREDIENTS
Pasta of your choice
eggplant
red peppers
zucchini
Cherry Tomatoes
onion
garlic
Oil, salt, pepper, oregano
PREPARATION:
Cut the vegetables and put them in a pan with a drizzle of olive oil, salt and pepper (if you do not like tomatoes too cooked, add them toward the end of cooking). Let it cook with the lid on for 20 minutes, adding a little 'water occasionally to prevent the vegetables from sticking to the pan (and to avoid adding too much olive oil). When the vegetables they reach a smooth texture, turn off the plaque.
Meanwhile cook the pasta.
When the pasta is ready add to the sauce and cook for a few minutes, add the oregano and serve
