Italian Ostia Spaghetti with clams

The spaghetti with clams are one of the most famous and popular dishes of the Neapolitan culinary tradition , where they are known as " vermicelli with clams ."

Although now the spaghetti with clams are prepared in every corner of the world , it is impossible for those who went to Naples not try this delicious dish , perhaps savoring the sea .

The spaghetti with clams have also become one of the dishes required for the Christmas dinner and New Year's .


400 gr
3/4 cloves
1 bunch
1 kg
extra- virgin \ 's oil 1 cup
according to taste

The preparation of spaghetti with clams begins a few hours before : we must in fact leave the clams a few hours, rather a whole night , soaked in salted water to allow purging of any impurities. A trick to immediately remove the clams that is to contain sand are tapped one by one on a cutting board on the side of the opening . If you come out of the dark sand means that the clam will be chock-full of sand and will then be thrown out. Prepare a large pot where to open the clams on high heat ; clams should be removed from the fire immediately after the complete opening , nothing is more damaging to the flavor of the clams that prolonged cooking .

Separate the clams from the liquid that will be formed , and strain . Aside put to brown the garlic cloves crushed or whole oil and , as soon as the garlic is ready , pour the cooking liquid and let it thicken a bit ' . Chop the parsley  and add one part of the preparation . Finally add the clams that depending on the tastes have been partially shelled  , and cook for a few moments. Mix the spaghetti or vermicelli , which in the meantime you have cooked al dente with this delicious sauce of clams , adding to the last remaining parsley and pepper at will
