Pistocchi Cakes Recipe -Torta Pistocchi : Italian Recipe
Ingredients for 8 servings ______________________________________________________
200 g . Dark Chocolate 75 %
200 g . fresh cream
17 g . cocoa
a handful of chopped pistachios
Preparation
Make the chocolate into small pieces and place in a bowl of steel , melt it in a bain marie . When the mass is fluid at about 48 degrees to make the tempering , ie, pour the mass of a metal surface with a steel trowel scraping bringing the temperature to about 34/36 degrees, then put back in the pan and bring to the previous 48 degrees. Meanwhile, in another large saucepan bring the cream to the fire and when it is lukewarm start adding the cocoa powder ( sifted ) and mestolando always brings everything to 80/ 90 degrees.
While the cream and cocoa are cooled to about 50/60 degrees before adding the chocolate tempered , always mestolando . When everything is well mixed put into molds . Place the molds in the fridge. Sprinkle with cocoa or other I chose a chopped pistachios
ps: I find it best to put the molds in the freezer for 20 minutes and then consume them directly .
