Italian Gluten Free chickpea fritters recipe

Ingredients for 4 people 

250 g chickpea flour 
750 ml water 
1 bunch parsley 
seed oil for frying 


In a saucepan, dissolve the chickpea flour in 250 ml of cold water, stirring constantly with a whisk so no lumps are formed. Gradually add the remaining water, always cold, and salt and pepper. Place the pot on the stove over low heat, stirring constantly, bring to a boil and cook for about 15 minutes, until the mixture begins to peel away from the walls. At the end of cooking, add the parsley, washed, dried and chopped, and immediately pour the mixture onto a smooth surface and wet. 

Straighten it with a rubber spatula until it is thin. Just cold, ricavatene rectangles, circles or lozenges, at your leisure. Heat plenty of oil in a frying pan and fry the portions of seeds obtained will be until lightly browned on the surface. 

Sprinkle with salt and pepper and chickpea fritters served piping hot, and decorate as desired with a few sprigs of parsley.
