Summer is almost upon us but spring is still not completely finished. For this reason, today I decided to prepare a tasty dish, healthy and above all, seasonal pasta with asparagus.
Pasta with asparagus is a delicious first course based penne topped with a cream of asparagus simple but very tasty.
A recipe especially suited to savor the flavor of this vegetable is typical of the spring months.
Pasta 400 gr
700 g fresh asparagus
1 cup white wine
1 small onion
Broth 250 ml
2 tablespoons grated Parmesan cheese

To prepare the pasta with asparagus started to clean the vegetables. After you have scraped the outer green part, cut the ends harder and clear (1), grouped the asparagus into a bundle and tie with string if necessary pareggiateli with a knife so that they have all the same length. Now proceed with the cooking using the appropriate Asparagus, a high pot with basket, which will have filled with water and in which storing the bunch of asparagus (2). Let the asparagus tips remain out of the water so you only cook with steam (3). Bake for 15 minutes until soft.
Cut the cooked asparagus into small pieces (4) and set aside tips for guarnizione.Intanto fry the finely chopped onion in oil, add the asparagus, cut into small pieces (5), pour the white wine (6) and continue cooking adding the broth from time to time.
When the mixture will be soft pass it to the mixer to form a cream (7), salt and pepper to taste (8). Meanwhile, prepare the pasta in boiling salted water, cook the penne, drain and add them to the cream (9), if necessary, use a little 'cooking water to mix the cream better. Finally add the asparagus and season with grated Parmesan.
