Ingredients for 2 people
200g Arborio rice
500 g vegetable broth
1/2 onion
170 g frozen peas
6 fresh mint leaves
40 gmolio olive
salt
grated Parmesan cheese
Preparation
1. Fry a quarter of the onion in 2 tablespoons of 'oil.
2. Add the peas, a little 'hot broth and cook 8 minutes.
3. Halves blend of peas with mint and a bit 'of broth.
4. Fry the rest of the onion, add the rice, raise the heat and toast for a few minutes.
5. Covering just the rice with the broth and cook for about 15 minutes, stirring constantly and adding the hot broth, as needed.
7. Halfway through the cooking, pour the puree of peas and mint.
8. Turn off the heat, quickly add whole peas and cheese, stir, cover and let stand for 5 minutes.
