Pumpkin Ravioli with Sage Butter : Italian traditional


The pumpkin ravioli is one of the typical dishes of Mantua and certainly one of the most popular dishes in Italy, also because related to the Christmas tradition: pumpkin ravioli are always the typical first course to be consumed during dinner on Christmas Eve.

Filling

pumpkin (locally produced), peeled, de-seeded and cooked within our laboratory, amaretti semolina, Parmesan cheese, sugar and breadcrumbs


Ingredients for four people


500g pumpkin tortelli
100g butter
1 pinch of sage leaves
Parmesan cheese (to taste)
Traditional Balsamic vinegar from Reggio Emilia (to taste)

Preparation

Melt butter together with the sage leaves.

Then add cooked tortelli.
Sprinkle with parmesan cheese and decorate with balsamic vinegar.

The tortelli should be cooked for 4/5 minutes
