Italian Pasta with tomato and rocket salad recipe
Today's recipe is pasta with tomato and rocket salad, a main course vegetarian but also vegan simple but delicious. The preparation of this dish is really easy and fast, then the rocket is good or bad in all seasons, so it is a dish that you can prepare always, because it's pretty cheap. I often prepare this pasta dish because it is a quick and genuine.
Ingredients (for 2 people)
160 g short pasta (eg penne, rigatoni, fusilli ...)
2 large bunches arugula
4-5 coppery red tomatoes
1 clove of garlic
2 tablespoons extra virgin olive oil
1. The rocket Clean up by rinsing several times to remove all residues earth. No need to remove all the leaves. Sciasquate the tomatoes and cut them into chunks. Peel the garlic.
2. Pour the oil in a pan, add the garlic and tomatoes and cook over a low heat with the lid. Mash the tomatoes when they become more tender and add a little water. Season with salt.
3. Meanwhile, boil salted water. Combine the arugula, and the resumption of the boil pour in the pasta.
4. When the pasta is ready, drain and toss with the tomatoes. Pasta with tomato and rucola can then be served.
You can enrich the sauce pasta with tomato and arugula joining tomatoes 2 tablespoons of tomato puree.
