Italian Noodles with prawns and zucchini recipe

For a long time I had promised to prepare the noodles with prawns and zucchini to satisfy the request by my daughters, especially because I've heard enough about a well-known restaurant where they cook this dish so sublime.



Ingredients: noodles with prawns and zucchini quick recipe for 4 prs


500 g of egg noodles

350 g prawns medium-large fresh or frozen

a bunch of parsley

1 glass of 150 ml of dry white wine

2 shallots

2 small zucchini

50 ml of fish stock or vegetable

3 tablespoons extra virgin olive oil

salt and pepper



Preparation


Shell the prawns, wash and then dab on a kitchen towel.

Wash and trim the zucchini, slice them thin with the help of a mandolin or a sharp knife.

Browse the parsley, wash and dry with kitchen paper and chop fine, also chopped shallots.

In a large frying pan heat the oil and saute the shallots over medium heat, add the shrimp, let them season and pour in the white wine.

Add slices of zucchini, let them dry a few minutes then add salt and pepper, then add the hot broth, and the chopped parsley. Simmer over low heat for a few minutes until the zucchini are tender but not limited untrimmed and the sauce just enough to accommodate the noodles.

Boil the noodles until al dente, drain and pour into a baking pan with the sauce, stir well and add the remaining chopped parsley.

Serve the noodles with prawns and zucchini hot or lukewarm, are a delight in the pure state .. and enjoy!
