Cruncy Trastevere Pizza Margherita

Born in Naples in 1889, by the inspiration of the Neapolitan pizzaiolo Raffaele Esposito, the margherita pizza was created on the occasion of the visit of Queen Margherita, then sovereign of Italy with the King Umberto I, in the beautiful city of Naples.
Esposito created for that event three very different pizzas, but the Queen appreciated particularly that with mozzarella and tomato, and from that moment on, in his honor, was named Margaret.

Ingredients: 500 gr. Flour
15 gr. of Yeast
Extra virgin olive oil
1/2 teaspoon of salt
Tomato Sauce

Heat 250 ml di'acqua and dissolve the yeast. Pour into a bowl. Add 1 pinch of salt. Pour the flour, add 2 tablespoons of olive oil and knead until you get a homogeneous mixture. Cover with a cloth and let rise for at least 2 hours.
Roll out the dough with a rolling pin on floured work surface.
Grease a baking dish with oil. Disponeteci the basis for the pizza. Tomato and sprinkle with salt.
Bake in a hot oven for about 1/2 hour at 200 degrees.
Add the diced mozzarella and basil leaves. Bake for 5 more minutes.
To prepare a good pizza margherita is important to choose quality ingredients, starting with oil and mozzarella.
Ideas and variations:
The margherita pizza is also excellent with fresh tomato, in which case you have before the mozzarella, then sprinkle with diced tomatoes.
