Amalfi Cake with almonds and silt
I wanted so much to make this simple cake from the oven , flavored with lemon .
A cake simple but exquisite, delicate , aromatic, which brings us back to our childhood . I loved it
Ingredients for 6 people
160 grams of icing sugar
130 gr soft butter
100 grams of whole eggs ( 2 ) at room temperature
100 grams of fresh whole milk at room temperature
100 grams of peeled almonds sweets
80 grams of flour 00
50 g of potato starch
2 lemons on the Amalfi coast
1 vanilla pod
60 g candied lemon peel
5 grams of baking powder for cakes
2 grams of salt
With an electric mixer , in a large bowl , mounted in cream the butter with the sugar for about 5 minutes. Add the grated rind of lemon , salt, vanilla and chopped candied lemon peel , finely chopped . Then incorporate the eggs , one at a time , emulsified with an electric mixer at low speed. Separately, sift the flour with the starch , baking powder and then add the almonds after they have been reduced almost to powder in a mixer. Prepartao blended into the mixture , little by little , milk , alternating mixtures of flour, baking powder and almonds. Pour the mixture into a hemispherical mold of 18 cm in diameter, previously buttered and floured with corn flour ( I round pan 22 cm diameter and 50 minutes of cooking ) . Bake at 160 ° for about 60 minutes . Then let it cool , but misshapen cake on a serving platter while still warm . Just before serving , spolveratene the surface with icing sugar.
