Frascati Doc Superiore : Best Italian Wines
Grapes: Malvasia del Lazio , Trebbiano Toscano, Malvasia di Candia , Bonvino , Bellone
Vineyards: Vineyards dell'Az . Agr. Casale Marchese , the vines are pruned cordon , on a soil of volcanic origin. Density of plants / ha 4,000. The average yield of grapes per vine is 2 kg .
Vinification: Manual harvest in crates of 15 kg . Soft pressing and selection of different fractions of must. Static clarification and separation of funds. Addition of selected yeasts . Alcoholic fermentation controlled temperature ( about a week) . Cold tartaric stabilization in the month of December. Bottling on more lots from January until June . Marketing after one month from the first bottling .
Nose: Immediate hints of tropical fruit, with slightly herbaceous floral nuances .
Taste: The taste is savory. Full-bodied taste with soft, elegant and enveloping. The Frascati is known as a wine to be drunk within the next harvest . The Frascati " Casale Marchese " , although nice as early as February-March , giving the best of themselves only in the vicinity of the summer and then adds a very slight stay in the glass .
Serving suggestions: Excellent as an aperitif , fish , raw meat and fish, pizza, fresh goat cheese .
